On Tuesday afternoon during STEAM, the Grade 5’s made a simple cheese using only full cream milk and lemon juice. We wanted them to see that modern food production had its origins in ancient practices. One quarter of a cup of lemon juice was added to one litre of boiling hot milk.

After a quick stir the bowl was left so the curds could form. The cooled curds and whey were poured into a cheese cloth and the cloth was hung overnight in the fridge. On Wednesday we all had the chance to try the cheese; first plain then with a herb and garlic sprinkle mixed through it.
